Many poultry farmers are surprised to learn that a fertile egg embryo can begin developing before it even enters the incubator!
A broiler embryo starts meaningful development once the egg temperature rises above the physiological zero temperature of around 20–21°C (68–70°F).
✅ Below 20°C
The embryo remains mostly dormant and development is paused.
✅ Between 20–27°C
Slow embryonic activity begins.
✅ Around 37.5°C
Optimal incubation temperature for healthy embryo growth and hatchability.
⚠️ Why proper egg storage matters:
Fertile eggs should ideally be stored at 16–18°C to prevent uneven early development. If eggs warm above 21°C for long periods before incubation, embryos may start developing too early, which can reduce hatchability and chick quality.
📌 Important Hatchery Tip:
Repeated warming and cooling during storage can damage embryos and lower hatch performance — especially in older eggs.
🥚 During incubation:
• Standard incubation temperature: 37.5°C
• Ideal eggshell temperature (EST): 37.8–38.1°C
